3 mocofava recipes to try the northeastern cuisine

If you are a fan of Northeastern food, the following mocofava recipes will surprise you! With ingredients that give a lot of substance, a broth full of flavor and an unmistakable seasoning, this dish will please the whole family at lunchtime. Check out:

1. Mocofava with cassava flour

Ingredients

  • olive oil to taste
  • 5 cloves of minced garlic
  • 100 g of bacon in pieces
  • 1 chopped onion
  • 3 chopped tomatoes
  • 1 coffee spoon of white pepper
  • 1 tablespoon cumin
  • 1 chopped red pepper
  • 300 g beef jerky, desalted, minced and cooked
  • 100 g smoked sausage, sliced
  • Chopped green chili to taste
  • 1 tablespoon of paprika
  • 1 teaspoon powdered coriander seed
  • 1 mocotó, chopped and cooked
  • 200 g of selected fava beans and soaked
  • 50 g of cassava flour

Method of preparation

  1. Before starting, reserve the water used to cook the mocotó and the fava sauce;
  2. In a pan, heat the oil, sauté the garlic, then add the bacon, onion and let it brown a little;
  3. Add the tomato, pepper, cumin, pepper, sauté a little, add the jerked beef, sausage, a little more oil and sauté;
  4. Add the green smell, paprika, coriander a little of the water reserved in the first step and continue cooking;
  5. Add the mocotó, the fava beans, the rest of the reserved water, the flour, mix, cover the pan and let it cook to reduce;
  6. When the sauce has reduced and everything is well cooked, just serve with more parsley.

2. Mocofava with ribs

Ingredients

  • 1 and 1/2 kg of mocotó in pieces
  • vinegar to taste
  • salt to taste
  • 1 kg of desalted pork ribs
  • 500 g fava beans, soaked overnight
  • 200 g diced bacon
  • 5 minced garlic cloves
  • 1 chopped chili pepper
  • 1 chopped onion
  • 2 teaspoons of Bahia seasoning
  • 1 teaspoon of paprika
  • green smell to taste

Method of preparation

  1. Clean the mocotó, put it in a pressure cooker, cover with water, add the vinegar and bring to a boil. After boiling for 3 minutes, drain the water;
  2. Add boiling water to cover the mocotó, salt, cover the pan and let it cook under pressure for 1 hour;
  3. Then reserve the boneless mocotó and, in the cooking water, place the ribs to cook, adding more water to cover. Cover the pan and let it cook under pressure for 20 minutes;
  4. Drain the fava soaking water and, in another pan, cover it with water and boil for a few minutes to remove the bitterness. Drain this water, cover the fava with hot water and let it cook;
  5. In a skillet, fry the bacon, then transfer it to the pan with the ribs. In the same skillet, sauté the garlic with the pepper and onion, then pour it into the rib pan;
  6. Add the mocotó, the fava beans, the Bahian seasoning, the paprika, mix and adjust the salt;
  7. Add the green smell, mix, let it cook for about 10 minutes and it’s ready.

3. Mocofava with jerky

Ingredients

  • 1 fresh mocotó
  • 2 chopped tomatoes
  • 1 chopped green pepper
  • 5 minced garlic cloves
  • 2 chopped onions
  • 1 bunch of chopped coriander
  • 1 teaspoon of black pepper
  • 1/2 cup of oil
  • 1 dessert spoon of paprika
  • salt to taste
  • 2 l of water
  • 500 g fava beans and soak overnight
  • 400 g smoked pepperoni, sliced
  • 400 g of shredded beef

Method of preparation

  1. In the pressure cooker, add the mocotó, a part of the tomato, the pepper, the garlic, the onion, the coriander, the pepper, the oil, the paprika, the salt and cover with the water;
  2. Close the pot and leave it under pressure for 1 hour and 20 minutes. Then reserve the mocotó with the broth;
  3. In another pan, leave the fava beans to cook with the sausage, the jerky and seasonings until soft;
  4. Add the rest of the ingredients, sauté a little and add the mocotó with the broth;
  5. Adjust the seasoning and you’re done.
