1. Tender honey with pineapple

Ingredients

  • 1 tender
  • 2 cans of pineapple in syrup
  • honey to taste

Method of preparation

  1. Cut a slice of the tender horizontally to help it stick to the surface. Along the meat, make cuts in slices, but without reaching the end;
  2. Between each cut, place a slice of pineapple and transfer the meat to a platter;
  3. Chop the rest of the pineapple into smaller pieces and spread it on the platter;
  4. Brush the tender with honey and pour a little of the pineapple syrup;
  5. Take it to the oven for 30 minutes, brush a little more honey and return to the oven for another 10 minutes;
  6. Remove from the oven and serve as you prefer.

2. Tender with pineapple and orange sauce

Ingredients

  • 1 cup chopped pineapple
  • 1/2 cup of sugar
  • 2 tablespoons of mustard
  • 1/2 tablespoon of salt
  • 10 large mint leaves
  • 2 cups of orange juice
  • 1 tender
  • cloves to taste
  • 1/2 cup pineapple jelly
  • 2 tablespoons unsalted butter
  • 1 tablespoon of wheat flour
  • 2 tablespoons of water

Method of preparation

  1. In a blender, add the pineapple, sugar, mustard, salt, mint leaves and orange juice. Beat for 2 minutes and set aside;
  2. Make transverse cuts in the tender and also use a fork to poke holes in the surface;
  3. Place the tender inside a plastic bag, pour the liquid from the blender and tie with a knot. Store in the fridge for 4 hours, turning the meat halfway through;
  4. Open the bag and transfer the meat with the liquid to a roasting pan. Stick cloves into the cuts made with the knife;
  5. In a bowl, mix the jam with the butter. Brush this mixture all over the meat;
  6. Bake in a preheated oven at 200°C for 30 minutes. Remove from the oven, drizzle with the liquid and return to the oven;
  7. Water the tender every 15 minutes until it completes 1 hour and 30 minutes baking or until golden;
  8. Place the tender on a serving platter and pour the liquid into a pan to make the sauce;
  9. Dissolve the flour in the water and add to the sauce. Bring to a boil and cook for 5 minutes;

Ingredients

  • 1 tender
  • 500 ml of pineapple juice
  • Water
  • 1 chopped pineapple

  • chopped mint to taste

Method of preparation

  1. In a pan, add the tenderloin and pineapple juice. Add water until the liquid covers the meat and cook for 1 hour after it starts to boil;
  2. For the relish, in a bowl, combine the pineapple with the chives, lemon juice, peppers and mint. Store in the fridge;
